Chicory salad with figs and blueberries

Ingredients for 2 servings:

  • 2 small chicory
  • 2 figs, fresh
  • 1 handful of blueberries
  • 2 tbsp oil, e.g. avocado oil
  • 1 tsp mustard
  • 1 tsp maple syrup
  • 2 tbsp white seasoning
  • some salt
  • some pepper, freshly ground

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Combine all the dressing ingredients in a shaker or salad bowl. Wash the chicory, halve or quarter it, trim it, and remove the hard, bitter stalk. Cut it into bite-sized pieces. Mix with the dressing. Wash the figs, pat them dry, trim the stems down to the flesh, and cut the figs into eighths. Add to the chicory and fold in. Divide the salad among plates and serve sprinkled with blueberries. It goes well as a side dish, for example, with turkey schnitzel.
