Turkish meatballs with tomato sauce
Peel the onions and dice them into small cubes. Wash and finely chop the parsley. Place the minced meat, onion, and parsley in a bowl. Add the soaked and squeezed-out bread roll and the eggs. Season with salt and pepper and knead everything into a smooth meat dough. With wet hands, form walnut-sized balls, coat in flour, and then sear all over in hot oil in a pan, then continue to fry over low heat. Meanwhile, blanch the tomatoes, peel them, and dice them, removing the seeds. Add them to the pan and simmer for a short while. Pour in the meat broth, and continue to cook the meatballs and tomatoes over low heat for about 10 minutes. Season the sauce to taste. Serve with pasta or rice.
