Salmon and avocado tartar

Ingredients for 4 servings:

  • 150 g salmon fillet(s)
  • 100 g avocado(s)
  • ½ cucumber(s)
  • 1 lime(s)
  • 100 g fennel
  • some olive oil
  • some chili, ground
  • some pepper from the mill
  • some soy sauce
  • 8 prawn crackers or other rice chips

Finely dice the salmon fillet, avocado, fennel, and half of the cucumber (no more than 0.5 cm in size). Finely slice the rest of the cucumber. Mix everything in a bowl. Zest half of the lime and add it to the bowl along with the lime juice (more or less to taste). Drizzle with a generous splash of olive oil and season with salt, pepper, chili, and soy sauce. Let it sit for a while (about 30 minutes). Arrange the cucumber slices in a fan shape on a small plate and place a scoop of salmon tartare on each one using an ice cream scoop or a tablespoon. Garnish with lime zest, pepper, and a few drops of olive oil and soy sauce. Serve with the prawn crackers. Tip: If you like, you can also mix in finely chopped spring onion or garlic.
