Salmon and cheese casserole

Ingredients for 4 servings:

  • 4 salmon fillets
  • butter
  • 1 onion(s)
  • 75 g Parmesan
  • 200 ml cream
  • 1 can of tomatoes, chopped
  • 1 tbsp mustard, medium hot
  • 1 tbsp lemon juice
  • 100 ml white wine
  • possibly chili flakes
  • possibly peppercorns, green
  • Salt
  • pepper
  • Thyme
  • optionally cheese (Emmental, Parmesan, Mozzarella), for topping

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

It really couldn’t be faster

Preheat oven to 225 degrees Celsius (425 degrees Fahrenheit). Rinse the salmon, pat dry, and place in a buttered baking dish. Peel and finely dice the onion. Sprinkle it into the dish. Mix grated Parmesan with cream, tomatoes, mustard, lemon juice, and white wine. Season with salt, pepper, thyme, and chili flakes and green pepper, if desired. Pour the sauce over the salmon, sprinkle with cheese if desired (it works well without), and bake for 25 minutes. Serve with pasta and a green salad. It’s also good with white bread, as the sauce is generous. You can, of course, sauté the onions beforehand and make a sauce; we like it that way too.
