Salmon and tuna tartar with herbs

Ingredients for 5 servings:

  • 400 g salmon fillet(s), fresh (loins)
  • 150 g tuna fillet(s), fresh
  • 3 tsp shallot(s), French, finely chopped
  • 2 tbsp walnut vinegar
  • 1 tbsp water
  • 2 tbsp olive oil
  • 2 tbsp chives
  • 1 tbsp lemon juice, organic
  • 1 tbsp parsley, finely chopped
  • 1 tbsp French mustard, old
  • 1 tbsp capers, chopped
  • 1 tbsp chili sauce or Tabasco
  • salt and pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 10 minutes; Total time approx. 25 minutes

On a work surface, cut the fish into small cubes with a knife and gradually add them to a chilled bowl. Set aside in the refrigerator. In a small bowl, combine the shallots, vinegar, and water. Marinate for 10 minutes. Drain the shallots and add them to the fish along with the remaining ingredients. Season with salt and pepper and mix well. For an attractive presentation, the tartar can be formed into large serving rings.
