Salmon As Salmon Tartare with Avocado Foam

Ingredients
 

you don't need much

  • 300 g Salmon
  • 2 piece Eggs
  • 1 piece Avocado
  • 1 Piece toe Chopped garlic
  • 1 Teaspoon. Lime zest

of spices

  • Black pepper from the mill
  • Salt flavored with lavender sugar
  • A touch of chili powder
  • A good olive oil
  • A touch of mustArd
  • Pumpernicle

Instructions
 

  • Separate the salmon from the skin 2. Cut into small cubes 3. Sprinkle with lime zest
  • 4. Spoon the avocado out of the skin 5. Put the olive oil and the garlic clove in a tall container 6. Season with pepper and salt 7. Puree until frothy
  • 8. Boil the eggs hard and cut them into small cubes 9. Mix with a little mustard, olive oil and chilli powder and then add to the salmon 10. Cut out the pumpernicle and place it in the decorative ring
  • 11. Mix the salmon tartare with the eggs and pour in. 12. Another slice of Pumpernikel 13. Fill in the avodado cream 1 Another slice of Pumpernikel 15. Add salmon tartare again.
  • Now a glass of champagne and the evening is saved 🙂
