Salmon fillet from the oven

Ingredients for 2 servings:

  • 2 salmon fillets
  • 2 tomatoes
  • 2 tbsp olive oil
  • 1 onion(s)
  • 1 garlic clove(s)
  • Parsley
  • salt and pepper
  • lemon juice

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

First, slice the tomatoes and onion. Then finely chop the garlic and parsley. Now roll out two large pieces of aluminum foil and layer a row of tomato and onion slices on top of each other. The row should be as long as the salmon fillet. Place the frozen fillet on top of the tomatoes and onions, followed by another layer of tomatoes, garlic, and parsley. Finally, drizzle with about 1 tablespoon of olive oil and sprinkle with salt and pepper. If you like, you can also drizzle with a little lemon juice. Then place everything in the oven at 180 degrees Celsius (top/bottom heat) for 30 minutes. Blanched spinach, for example, makes a good side dish.
