Salmon fillet with fresh herbs and butter

Ingredients for 2 servings:

  • ½ lemon(s), untreated
  • ½ bunch of dill
  • ½ bunch parsley, flat
  • 1 sprig(s) basil
  • 50 g butter
  • 1 tsp, heaped mustard, hot
  • 2 salmon fillets without skin
  • 4 medium-sized potatoes, waxy
  • Water (salt water)

Salmon fillet with fresh herbs tastes delicious and is easy to prepare.

Preheat the oven to 250°C (fan oven 220°C). Bring a pot of plenty of salted water to a boil. Peel and wash the potatoes. When the water boils, add the potatoes to the pot and boil. Wash and dry the lemon half in hot water, then thinly grate the zest. Wash and shake the herbs dry, then chop the leaves very finely. Knead the butter with the lemon zest, mustard, salt, and pepper, then mix in the herbs. Wash the salmon fillets and pat dry. Lightly season with salt and pepper and place them side by side in an ovenproof dish. Cut the herb butter into pieces and spread over the salmon. Place in the oven and bake for about 6 minutes. When the potatoes are done, remove them from the water and set aside briefly. Remove the salmon from the dish and arrange on a plate. Add the boiled potatoes, cut into wedges, and garnish with a little basil and lemon for decoration.
