Ingredients
For the orange and leek vegetables
- 1 kg Leek
- 2 Oranges fresh
- 1 tbsp Butter
- Chili
- 1 pinch Sugar
- 50 g Cream
- Salt
- Pepper
For the potato rösti
- 400 g Potatoes
- 2 Spring onion
- 1 Egg
- Salt
- Pepper
- Nutmeg
- Rapeseed oil
For the salmon fillet
- 4 Salmon fillet
- Salt
- Pepper
- Rapeseed oil
Instructions
- Clean the leek and cut into rings, wash thoroughly. Peel and fillet the orange. Melt the butter in a pan, add the leek and sauté. Season the vegetables with chilli, sugar, salt and pepper. Pour in the cream and stew everything until al dente. Fold in the orange fillets.
- For the rösti, wash the potatoes, peel them and grate them with the grater. Clean and wash the spring onions and cut into rings. Mix the grated potatoes, spring onion, an egg, flour, salt, pepper and nutmeg well. Heat the rapeseed oil in a pan. Add 2 tbsp of the potato mixture and fry the rösti on both sides until crispy. Bake more hash browns from the batter.
- Heat some rapeseed oil in a pan. Rinse salmon and pat dry. Season with salt and pepper and fry. Enjoy your meal!
