Ingredients
- 114 g Wild salmon
- 250 g Potato
- 1 Egg yolk
- 1 Shallot
- 1 tbsp Chopped parsley until smooth
- Salt, pepper, nutmeg
- 15 g Freshly grated horseradish
- 2 tbsp Cream
- 2 tbsp Lemon
Instructions
- Chop the horseradish into small pieces and mix with the whipped cream.
- Boil the potatoes, let them cool, peel and roughly slice.
- Mix the potatoes with the egg yolk, shallot and parsley. Season with salt, pepper and nutmeg.
- In a pan, fry 8 rösti of the same size in any shape in a little butter on both sides until crispy and brown.
- Cover the rösti with the wild salmon while still warm and garnish with cream horseradish, lemon and parsley.
