Salmon gnocchi

Ingredients for 2 servings:

  • 4 salmon fillets (frozen)
  • 1 large garlic clove(s), crushed
  • 500 g gnocchi
  • 200 g cherry tomatoes
  • 175 g cream cheese
  • 6 tbsp olive oil
  • 1 onion(s)
  • pepper
  • Salt
  • possibly chives

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Thaw the fish fillet. Rinse the fish, pat dry, and cut into cubes. Mix 3 tablespoons of oil with the crushed garlic and let the fish cubes simmer for a few minutes. Meanwhile, cook the gnocchi in salted water according to the package instructions and drain (reserving some of the cooking water). Peel and dice the onion. Wash and halve the tomatoes. Heat 1 tablespoon of oil and sauté the onion. Add the cream cheese and pasta water and stir to combine. Heat the remaining oil in a pan and fry the salmon cubes over medium heat for 3 minutes, turning occasionally. Season with salt and pepper. Mix the gnocchi with the tomatoes and cheese sauce and top with the salmon. Sprinkle with chives, if desired.
