Ingredients for 2 servings:

  • 1 m.-large zucchini
  • 2 eggs
  • 200 g smoked salmon
  • n. E. Cheese (Gouda), grated
  • e.g. oregano

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

ideal for low carb, Aktins, SIS, etc.

Finely chop the zucchini in a food processor and mix with the eggs (no need to add salt, as the salmon and cheese are salty enough). Spread the mixture onto a baking sheet lined with parchment paper. Spread the salmon and cheese on top. Bake in the oven at 220°C for about 25 minutes until golden brown. When the “pizza” is ready, sprinkle with oregano.
