Salmon sherry sauce for spaghetti

Ingredients for 4 servings:

  • 150 g shallot(s)
  • 1 garlic clove(s), diced
  • 20 g butter, diced
  • 5 cl Sherry Oloroso
  • 300 ml cream
  • 200 ml milk
  • salt and pepper
  • 200 g smoked salmon, shredded
  • basil
  • 400g spaghetti

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Cook the pasta until al dente. Drain through a sieve and set aside. Sauté the shallots and garlic in the butter. Pour in the sherry, cream, and milk and simmer for 10 minutes. Season with salt and pepper. Add the shredded smoked salmon and heat briefly. Pour everything over the cooked pasta, garnish with basil, and serve immediately.
