Ingredients for 4 servings:
- 4 ports. Salmon fillet(s), approx. 150 g each
- 250 ml chicken broth
- 200 ml cream
- 2 egg yolks
- 1 tbsp dill, finely chopped
- 2 tbsp basil, finely chopped
- salt and pepper
- oil
- lemon juice
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Whisk the egg yolks into 2 tablespoons of the cream, then heat the remaining cream. Pour in the chicken stock and reduce by about half. Remove from the heat and thicken with the egg yolk. Season with salt, pepper, and lemon juice, and add the dill and basil. Keep the sauce warm. Season the salmon slices with salt and pepper on both sides. Heat the oil in a pan and fry the salmon for about 2 minutes on each side. Serve with the sauce and, for example, spaghetti.
