Salmon Trout Fillet with Pasta in Peach Salsa Sauce

Salmon trout fillet
- 1 great Salmon trout fillet
- 1 great Lemon juice
- 1 tablespoon Butter
- 1 toe Garlic
- 1 toe Salt and pepper
Peach salsa
- 1 greater Peach
- 2 small Spring onion
- 2 cm Ginger
- 1 tablespoon Butter
- 4 piece Dried chili peppers
- 4 piece Salt and pepper
- 100 ml Vegetable broth
- 100 ml Lemon juice
- 100 ml White balsamic vinegar
- 2 tablespoon Creme fraiche Cheese
pasta
- 1 handful Spaghetti
general preparations
- Wash the salmon trout fillet and pat dry – then pull out the bones with tweezers and marinate with lemon juice – chill for at least 20 minutes – meanwhile wash and core the peach and cut it into bite-sized cubes – cut the spring onion into rings (the green rings to the side we will need them later for the decoration) – cut the ginger into tiny cubes

- Heat the butter in a pan, squeeze in the clove of garlic and fry the fish in the hot garlic butter on the skin side for about 2 minutes, turn it over and fry again for 1 minute – then it is taken out of the pan and gently cooked in the oven at 95 degrees – meanwhile you cook the pasta (I had thin spaghetti, but tagliatelle and the like also fit) and you prepare the peach salsa at the same time
Peach salsa
- Put the butter in the fish pan again – fry the spring onion and the ginger in it – then add the peach cubes and the dried chili peppers and fry them – deglaze with the vegetable stock and add a little lemon juice and a small dash of white balsamic vinegar – cover and stew for a few minutes – then with Refine the creme fraiche – add the cooked pasta to the peach salsa sauce and mix everything well – the prepared green spring onion rings decorate the top
serve and decorate
- You can either serve the peach salsa sauce and the pasta separately on the plate or, as described above, “bathe” the pasta in the salsa sauce and then put it on the plate … the fish can also be served in different ways ( see pictures) either serve as a whole fillet or put in pieces on the salsa pasta – there are photos for both variants …
