Salmon with a mustard and horseradish crust
- 2 Salmon fillets a 200 g
- 2 tbsp Butter
- 2 tbsp Mustard with horseradish
- 1 Egg
- 2 tbsp Breadcrumbs
- 40 g Grated mountain cheese
- 2 Garlic cloves pressed on
- 2 Branches Rosemary
- Salt
- Pepper
- Espelette pepper

- 1 Pear, abate
- 2 Shallots, finely diced
- 2 Garlic cloves, finely chopped
- 150 ml White wine dry
- 150 ml Vegetable stock
- 150 ml Cream
- Espelette pepper

- 1 tbsp Butter

Salmon fillet
- Put 1 tablespoons of butter, the egg, the mustard, the breadcrumbs and the grated mountain cheese in a bowl and knead into a homogeneous dough, then season it with salt, pepper and Espelette pepper.
- Spread this crust evenly on the salmon fillet. Preheat the grill setting in the oven. In a pan that you can also put in the oven, melt the other tablespoon of butter and let it froth up once. Remove the pan from the heat and put in the fillets, spread the garlic and rosemary around it.
- Now put everything under the grill in the oven for about 10-15 minutes (depends on the thickness of the fillets). In no case longer, otherwise the salmon will be too dry.

- Peel, core and quarter the pear, please do not remove the peel. Quarter the savoy cabbage and remove the stalk and then cut very finely. For the sake of simplicity, I did this in the food processor and chased the pear through with it. Went very quickly.
- Heat the butter with a little oil in a saucepan and sweat the shallots and garlic in it, then add the savoy cabbage and the pear and sauté vigorously for a few minutes. Then deglaze with the wine and vegetable stock and reduce almost completely.
- Then add the cream and season with salt, pepper and Espelette pepper and simmer to the desired consistency.
