Vegetables: Spicy Mustard Pickles

Ingredients
 

  • 1,5 kg Vegetable cucumbers
  • 1 Onion
  • 1 tbsp Yellow mustard seeds
  • 3 tbsp Sugar
  • 1 tbsp Salt
  • 1 Dried chilli pepper
  • 10 Black peppercorns
  • 10 Allspice grains
  • 3 Cloves
  • 2 Bay leaves
  • 1 tbsp Chopped ginger
  • 3 tbsp Chopped dill
  • 150 ml White wine vinegar
  • 150 ml Water

Instructions
 

  • Peel the cucumbers, cut in half lengthways, core and cut into bite-sized pieces. Peel and roughly chop the onion. Bring the water to the boil in a suitable saucepan, add all the spices (except for the fresh dill).
  • Approx. Let simmer for 10-15 minutes. Add the cucumber and onion pieces, sauté briefly, and with further addition of vinegar and possibly. the cooking stock is more spicy and acidic. The cucumbers need a lot of seasoning. Finally add the fresh dill.
  • Fill the jars with hot rinsing, min. Let stand for 5 days and you can try it. YUMMY !!!
