Broccoli Soup À La Heiko

Ingredients
 

  • 300 g Fresh broccoli
  • 150 g Scampi
  • 1 Onion
  • 1 Clove of garlic
  • 1 piece Fresh ginger
  • 100 ml White wine
  • 500 ml Vegetable broth
  • 100 ml Cream
  • Salt, pepper from the mill
  • Nutmeg
  • Clarified butter
  • Oil

Instructions
 

  • Clean the broccoli and cut into small florets. Peel the stalk and cut into small cubes. Peel the onion, garlic and ginger and cut into small cubes.
  • Heat the butter lard in a saucepan and sauté the onions, garlic and ginger in it. Now add the broccoli and cook with it. Season the whole thing with salt, pepper from the mill and nutmeg. Deglaze with the white wine and let it boil down. Add the vegetable stock and simmer for 15 minutes over low heat.
  • Remove the soup from the stove and puree with a hand blender.
  • Heat oil in a pan and sauté the scampi in it.
  • Stir the cream into the soup and bring to the boil again briefly. Season the soup with salt, pepper from the mill and nutmeg. Put the soup on a plate and serve with the scampi. Good Appetite.
