Salmon with olives and dried tomatoes

Ingredients for 2 servings:

  • 2 salmon fillets (frozen)
  • 1 handful of tomatoes, dried and soaked in water
  • Olives, black, pitted or with garlic
  • 2 garlic cloves
  • 1 spring onion(s)
  • salt and pepper
  • Parsley, dried or fresh
  • ½ lemon(s), the juice

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

simple, quick, delicious

Brown the salmon fillet on all sides in olive oil, remove from the pan. Brown the remaining ingredients (previously chopped) in the remaining pan juices. Pour in the tomato soaking liquid and lemon juice, and add the salmon. Cover the pan and simmer for 15 minutes at low heat. Serve with wild rice (with fried arugula on top) or pasta and leaf salad.
