Patzi's Ciabatta

Ingredients for 2 servings:

  • 2 small ciabatta for baking
  • Spice mix for bruschetta or Italian herbs
  • 2 packs of mozzarella
  • 1 can of tomatoes, chunky or
  • Tomato paste
  • e.g. Salami (Milanese Salami) or
  • Ham, cooked (Prosciutto cotto) or
  • Ham, raw (Prosciutto crudo) or
  • Sausage (Mortadella)

Cut the raw ciabatta in half lengthwise and bake in the oven for about half the allotted time according to the instructions on the package. If it is a ready-made ciabatta, then there is no need to bake it. Remove it from the oven and either spread with about 3-4 teaspoons of tomato paste per bread or, better yet, spread chopped tomatoes on top, letting some of the juice from the chopped tomatoes drip off so the bread doesn’t get too soggy. Season with bruschetta seasoning or Italian herbs if desired. Then spread ham, salami or mortadella on top according to your taste. However, the bread should still be thicker than the topping in the end. Spread the mozzarella, cut into not-too-thick slices, on the topped ciabatta and then bake for about 20 minutes at around 170°C fan oven. The baking time can vary; I am assuming ciabatta for baking.
