Salsify salad with honey-mustard sauce

Ingredients for 4 servings:

  • 1 jar salsify
  • 1 bell pepper(s)
  • 100 g cheese (Gouda, Emmental …)
  • Herbs (chives, parsley, dill, basil, etc.)
  • 1 tbsp honey
  • 1 tbsp mustard, approx.
  • 3 tbsp lemon juice
  • 5 tbsp oil
  • salt and pepper
  • 1 small onion(s)

Instructions

Working time approx. 45 minutes; Rest time approx. 30 minutes; Total time approx. 1 hour 15 minutes

Drain the salsify and add it to a salad bowl. Finely chop the herbs and add them to the bowl. Dice the bell pepper, cheese, and onion and add them to the salad. Drizzle the honey, mustard, lemon juice, oil, and spices over the salad and mix well. Let it all sit for at least 30 minutes. Done. We like this salad with pan-fried meat or as a side dish for a summer barbecue. It’s also delicious tossing the dressed salad into warm potato slices, for example, to make potato salad. I always use double the amount of sauce ingredients for this.
