Pastry sticks, for snacking or as an aperitif

Makes about 40 sticks. Mix the flour with the baking powder and place on a work surface. Make a well in the center. Add the salt, egg white, and water to the well, then sprinkle the margarine in flakes on top. Knead everything into a dough. Roll out the dough to about 5mm thick and shape into sticks about 2cm wide and 20cm long. Whisk the egg yolk with the milk, spread it on the dough, and sprinkle with caraway seeds. Twist the dough sticks into curls and place them on two baking sheets lined with baking paper. Bake in a preheated oven (convection oven approx. 150°C) for about 25 minutes and allow to cool thoroughly. These salt curls are delicious even for those who don’t normally like caraway seeds. The spice gives the sticks a special kick.
