Ingredients for 4 servings:

  • 500 g celery
  • 500 g leek
  • 500 g carrot(s)
  • 500 g onion(s)
  • 1 bunch of parsley
  • 500 g salt

Instructions

Working time approx. 30 minutes; Rest period approx. 2 days; Total time approx. 2 days 30 minutes

Clean and peel all the vegetables and put them through a meat grinder. Then add 500g of salt. Mix everything thoroughly. Then place a tea towel over the vegetables, store them in a cool, dark place (cellar or refrigerator), and let them rest for 48 hours. Stir well and fill them into screw-top jars. If stored in a cool, dark place, they will keep for several months and make a great seasoning for soups, sauces, stir-fries, and much more. You can change the ingredients of the vegetables to suit your taste. It might not look particularly tasty, but the dishes always have a fresh flavor, and friends and relatives will also be happy to receive a gift like this.
