Salty-sweet marzipan balls with pistachio crunch

Ingredients for 1 servings:

  • 200 g marzipan paste
  • 100 g pistachios, roasted and salted
  • 3 tbsp sugar
  • some water

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

Remove the shells from the pistachios and set aside about 1 tablespoon, then roughly chop the remaining pistachios. Heat the sugar in a small, non-stick pan until it begins to caramelize. Then add the chopped pistachios and mix them into the caramel mixture with a wooden spoon. Deglaze the mixture with a little water and continue to simmer, stirring constantly, until almost no water remains. While the mixture cools in a small bowl, finely chop the reserved pistachios or pulverize them with a food processor (just don’t overcook them, or they’ll turn into pistachio mush) and place them on a saucer. Then stir the warm caramel mixture into the marzipan and knead well. Finally, shape the marzipan into about 20 balls and roll them in the pistachio dust.
