Whisk the egg and brush it onto the rolled-out puff pastry. Then, spread the cayenne pepper and then the cheese over the puff pastry. Now, take a rolling pin (lightly flour it so it doesn’t stick too much) and press the cheese firmly onto the puff pastry. This will make the next step easier. Now, fold the dough once, i.e., fold the long side over once, and then cut into 8 strips using a pizza cutter or knife, always starting from the fold. Now, place a slice of bacon on each of the 8 strips. Then, hold both ends and twist to form a spiral. Place these spirals on a baking sheet lined with parchment paper. In the penultimate step, mix the rosemary with the brown sugar and spread it over the spirals (it sounds strange, but the sugar adds a fantastic kick). Bake the spirals in the oven at 180°C (fan oven) for 20-25 minutes. I always let them cool a little. They still taste delicious the next day. You can also reheat them briefly in the oven.
