Ingredients for 3 servings:

  • 250 g wheat flour type 550
  • 80 ml water
  • 2 eggs
  • 10 g salt
  • 250 g organic minced beef
  • 500 g potatoes
  • 1 large onion(s)
  • 100 g mountain cheese or similarly spicy cheese, grated
  • curry powder
  • pepper
  • Margarine, melted

Instructions

Working time approx. 45 minutes; Rest time approx. 40 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 2 hours 10 minutes

Mix flour, water, one egg, and 5g of salt into a dough and let it rest for 40 minutes. In the meantime, dice the potatoes and finely chop the onion. Mix both with the ground beef, cheese, 5g of salt (or a little more to taste), pepper, and curry powder. Roll the dough thinly into a square and spread a thin layer of melted margarine. Roll the dough into a tight log, then cut into 10 pieces and twist each piece so the “snail” is visible from above. Flatten the pieces and roll them out thinly to about 15cm in diameter. Place two heaped tablespoons of the filling on each piece of dough, or more if you like. Pull up the edges of the dough in three places and press them together in the middle, as well as the resulting seams. Turn the triangle over, flatten slightly, and place it on a baking sheet lined with baking paper. Whisk the remaining egg and brush the triangles with it. Bake at 180°C fan/convection oven for 45 minutes on the middle rack until golden brown. Serve with a fresh salad.
