Ingredients for 8 servings:
- 500 g flour
- 100 ml oil
- 180 ml water
- 80 g peas (frozen)
- 500 g potatoes
- 3 chili peppers, green, hot
- 15 g ginger
- 3 tbsp oil
- 2 tsp spice mix (garam masala)
- 2 tbsp coriander leaves
- Fat for frying

For the dough: Mix the flour, oil, water, and salt together and knead into a smooth dough. For the filling: Heat the peas with a little water in the microwave for 1 minute. Cook the potatoes until tender, peel, and cut into small pieces. Finely chop the chili peppers and ginger and mix together. Then fry the mixture with the oil in a large pan. Add the potatoes and peas and mix well. Season the mixture with garam masala and salt. Heat for about 2 minutes. Then remove the pan from the heat and stir in the fresh coriander. Roll out the dough into thin, round flatbreads (approx. 10 cm in diameter). Cut the flatbreads in half and fold each side towards the middle to form a small bag. Fill the flatbreads with the vegetable mixture and press the top edges together firmly. Deep-fry the filled samosas for about 7 minutes, until the dough turns a beautiful golden color.
