Ingredients for 1 servings:

  • 250 g flour
  • 1 tsp salt
  • 190 g coconut oil
  • 7 tbsp water (ice water)
  • Fat for the mold
  • 1 egg white
  • n. B. water
  • 6 apples
  • 2 tbsp lemon juice
  • 2 tbsp maple syrup
  • 100 g brown sugar
  • 1 tbsp cornstarch
  • 1 tsp cinnamon
  • 1 pinch of nutmeg
  • 1 tsp. clove powder
  • 2 tbsp butter for butter flakes

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Mix the flour with salt and gradually add the coconut oil until the mixture becomes lightly crumbly. With the mixer running, add about 4 tablespoons of ice water to make the crumble dough. Remove the dough from the bowl, shape into two sheets, wrap in cling film, and chill for about 60 minutes. Roll out one sheet of dough to about 3 mm thick, fold it in half, and place it in the greased 28 cm springform pan. Unfold it and form a rim about 3 cm high. Whisk the egg white with a little water and brush it onto the base and edges. Roll out the second sheet of dough slightly larger than the pan. Preheat the oven to 225°C (top/bottom heat, fan: 200°C). Wash, peel, core, and slice the apples. In a bowl, mix with lemon juice, maple syrup, sugar, cornstarch, and spices. Spread the filling on the dough and top with 1 tablespoon of butter. Place the second dough sheet on top and press firmly. Cover with the remaining butter. Pierce a few holes in the lid to allow steam to escape. Bake for about 10 minutes. Then reduce the temperature to 180°C (160°C fan-assisted oven) and bake the cake for another 40-45 minutes.
