Satay Skewers with Peanut Sauce and Rice
The perfect satay skewers with peanut sauce and rice recipe with a picture and simple step-by-step instructions.
Flesh:
- 400 g Chicken breast fillet
Marinade:
- 2 tsp Coriander grains
- 30 g Fresh ginger
- 1 small Onion
- 1 tbsp Chili paste
- 2 tbsp Coconut milk
- 2 tbsp Light soy sauce
Peanut sauce:
- 150 g Peanut Butter, Crunchy
- 1 tbsp Chili paste
- 130 ml Coconut milk
- 2 tbsp Peanut oil
- 3 tbsp Water
- 0,5 Lime, juice
- 2 tbsp Light soy sauce
- 0,25 tsp Freshly ground coriander
- 2 tbsp Sugar
- Wooden skewers, number depending on the amount of cut meat strips
- Oil for frying the skewers
Flesh:
- Wash, pat dry and remove any fibers. Then cut into thin, flat, wide strips. Provide.
Marinade:
- Coarsely crush the coriander grains in a mortar. (In the case of capsules, crush them first, separate the grains from the capsules). Then transfer to a larger bowl. Grate the ginger (unpeeled) and the peeled onion into the bowl as well. Pour in the chili paste, coconut milk and soy sauce and mix everything thoroughly.
- Now place the meat strips in the marinade and turn them thoroughly. Let it steep for at least 1 hour (more is better, meat becomes more tender and spicy). Stir everything every now and then.
- When the marinating time has elapsed, remove the meat strips and dab the marinade with a kitchen towel. Now stick the strips lengthways and waves on a wooden skewer. Provide.
Peanut sauce:
- Put the peanut butter, cili paste, coconut milk, peanut oil and the water in a saucepan. Heat everything while stirring (Caution, DO NOT boil!) Season to taste with the lime juice, soy sauce, coriander powder and sugar. Be careful with salt as the peanut butter is usually already salted. Keep sauce warm.
Completion:
- Cook the rice according to the instructions for the selected variety.
- In the meantime, heat plenty of peanut oil in a large pan (the bottom should be well covered). Fry the skewers on both sides until golden brown. This takes about 3 minutes each.
- Once the rice is ready and the still warm sauce is briefly stirred, it can be served immediately. If the sauce has thickened a little, either carefully (!) Add a little more coconut milk or just pour water.
- An easy-to-make dish. Also suitable for newcomers to Asian cuisine. Good Appetite.
