Ingredients for 4 servings:
- 500 g pork fillet(s)
- 2 garlic cloves, chopped
- 1 piece(s) ginger, hazelnut-sized
- 3 tbsp soy sauce, light
- 3 tbsp fish sauce
- 1 tsp brown sugar
- Salt
- pepper, black
- 1 tsp oil
- 2 limes, the juice
- 2 tbsp soy sauce, light
- 2 tbsp fish sauce
- 1 tsp brown sugar
- 1 chili pepper(s), red, cut into wafer-thin slices
- 1 tbsp garlic (chives, Asian store)
- Oil for frying
Instructions
Working time approx. 40 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 40 minutes
Cut the meat into thin strips and thread them onto oiled wooden skewers in a wavy pattern. Place these in a shallow baking dish. Prepare a marinade from chopped garlic and ginger, soy sauce, fish sauce, brown sugar, salt, pepper, and oil. Pour this over the skewers and cover with plastic wrap. Marinate in the refrigerator for at least 1 hour. Prepare a dip from squeezed lime juice, soy sauce, fish sauce, brown sugar, thinly sliced chili pepper, and garlic chives. Pan-fry or grill the drained skewers in hot oil for 3-4 minutes per side. Serve with the dip.
