Sauerkraut delight

Ingredients for 4 servings:

  • 2 m.-large onion(s), diced
  • 130 g bacon cubes
  • 1 tsp butter
  • 1 can wine sauerkraut
  • ½ small apple
  • 15 juniper berries
  • 2 bay leaves
  • 1 tsp stock powder or Vegeta
  • e.g. smoked pork, belly pork, liver dumplings, mettenden etc.
  • some salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour 10 minutes; Total time approx. 1 hour 25 minutes

Sauté the onions and bacon in butter. Add the sauerkraut with a little water. Cut the apple into fairly small pieces, add it along with the juniper berries, bay leaves, bouillon powder (or Vegeta), and the meat, and simmer for about 1 hour over low heat. Then remove the apple pieces and season the sauerkraut with salt and pepper. Serve with mashed potatoes.
