Sauerkraut in the traditional style

Ingredients for 4 servings:

  • 500 g sauerkraut
  • 1 small onion(s)
  • 75 g bacon, streaky
  • 25 g mustard, medium hot
  • 15 g lard
  • 100 g sugar
  • Salt
  • Pepper, white
  • Caraway seeds
  • marjoram

Instructions

Working time approx. 10 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Melt the lard in a saucepan and fry the diced bacon until crispy. Add the diced onions and sauté. Add the sugar and let it caramelize slightly. Add the sauerkraut, season with caraway seeds, and mix. Let it simmer for about 15-20 minutes. Add the mustard until the liquid thickens slightly. Season with salt, pepper, and marjoram.
