Summer salad of tomatoes, nectarines and strawberries

Ingredients for 4 servings:

  • 4 tomatoes
  • 1 nectarine(s), fully ripe
  • 5 strawberries
  • 1 spring onion(s)
  • 1 mint sprig(s)
  • 1 tbsp olive oil
  • 2 tbsp balsamic vinegar, lighter
  • salt and pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Cut the tomatoes into eighths, remove the cores, and cut them into small pieces. Deseed the nectarine and cut the flesh into small pieces. Rinse the strawberries and spring onions and cut them into small pieces or rings. Remove the mint leaves from the stems and finely chop. Place all ingredients in a bowl and mix together, then season with salt and pepper. Whisk together the olive oil and balsamic vinegar and drizzle over the salad. Let everything infuse, then serve. For 4 servings, one serving has 102 kcal.
