Sauerkraut soup "Zelňačka"

Ingredients for 4 servings:

  • 1 onion(s)
  • 500 g sauerkraut
  • 250 g bacon, streaky, diced
  • 2 tbsp tomato paste
  • 1 tsp cumin, ground
  • 1 tsp caraway seeds
  • 1 liter vegetable broth
  • 1 Vienna sausage
  • salt and pepper
  • Paprika powder, sweet
  • Parsley, chopped
  • e.g. sour cream
  • 4 slice(s) bread(s) (small slices)

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Peel and finely dice the onion. Tear the sauerkraut into small pieces. Fry the bacon in a pan (if the bacon is too lean, add a little oil), add the onions, and sauté. Add the sauerkraut and sauté briefly. Add the tomato paste and stir in. Season with cumin and caraway seeds and deglaze with the broth. Bring to a boil and simmer for about 15 minutes. Thinly slice the sausages. Add them to the soup about 5 minutes before the end of the cooking time and season with salt, pepper, and paprika. Serve the soup in deep bowls with parsley. Add a dollop of sour cream and serve with a small slice of bread.
