Ingredients for 2 servings:

  • 6 sausages
  • 2 tsp tomato paste, approx.
  • 1 can tomatoes, chopped
  • 2 tbsp Italian herbs
  • 1 fennel, optional
  • 2 servings of spaghetti
  • Olive oil for frying
  • salt and pepper
  • e.g. Parmesan

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

First, peel the sausage meat and shape it into small balls. Fry the balls in a pan in a little olive oil until lightly browned. Add about 2 teaspoons of tomato paste and toss or stir well. Chop a fresh fennel, add it, and fry it (you can also omit it). While the sausage is frying, bring the pasta water to a boil and cook the spaghetti according to the package instructions. Deglaze the cooked sausage with a little pasta water and add the chopped tomatoes. Then season and finish with the Italian herbs. Serve the finished pasta and sausage together and sprinkle with fresh Parmesan cheese, if desired.
