Sausage and potato stars

Ingredients for 4 servings:

  • 200 g potatoes
  • 1 egg(s)
  • 12 knackwursts
  • 1 bunch of chives, cut into rolls
  • 1 bunch parsley, chopped
  • e.g. salt and pepper
  • 150 g mozzarella, grated

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Peel and boil the potatoes. In the meantime, halve the sausages and then halve each half lengthwise, making sure not to cut all the way through the tip. Insert a toothpick into the halved end and pull the ends apart slightly to form a triangle. Arrange the sausage triangles on a baking sheet to form a star. Once the potatoes are cooked, place them in a bowl and mash with a fork. Add the egg, chopped parsley, chives, salt, and pepper, and mix. Spoon the potato mixture into the stars and smooth them down with a spoon. Sprinkle with grated mozzarella. Bake in a hot oven at 200°C (top/bottom heat) for 10 minutes. Remove the toothpicks after baking. Serve with salad.
