Ingredients for 4 servings:
- 400 g Bockwurst
- 300 g potatoes
- 300 g beans, green
- 100 g bacon, diced
- 2 onions, red
- 2 cloves garlic
- salt and pepper
- 200 g tomatoes, pureed
- 2 tbsp tomato paste
- 2 tbsp soy sauce
- 4 tbsp balsamic vinegar
- 1 tbsp honey
- 1 large chili pepper(s), chopped
- e.g. Parmesan and Emmental cheese, grated
- 200 g crème fraîche
- Cognac for flambéing
Instructions
Working time approx. 35 minutes; Total time approx. 35 minutes
For the casserole, peel and slice the potatoes. Then boil for about 7-10 minutes. Trim the beans and cook until al dente. Cut the sausages into pieces. Fry in a large pan until golden brown, then flambé with the cognac. Make a spicy sauce from passata, tomato paste, soy sauce, balsamic vinegar, honey, and the chopped chili pepper. Add the fried and flambéed sausages and mix everything together. Fry the green beans with bacon, onions, garlic, salt, and pepper in the same pan as the sausages. In a casserole dish, place a layer of potatoes and spread with crème fraîche. Then place a layer of sausages on top, followed by the beans and bacon. Finally, top with the two cheeses. Depending on the size of the casserole dish, you can add more toppings in this order. Bake in a preheated oven at 180°C for approximately 25-30 minutes. A hearty, very tasty casserole.
