Sausage filling for pancakes

Ingredients for 2 servings:

  • 200 g sausage leftovers (extra sausage, salami, whatever)
  • 1 egg(s)
  • 1 handful of parsley
  • Salt
  • pepper
  • 50 g cheese (Emmental, Tilsiter or similar)
  • 1 onion(s)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Use up leftover sausage

Cut the leftover sausage into small cubes, along with the onion. Lightly fry the sausage and onion, then add the cheese and egg and mix until the egg sets. Season with parsley, salt, and pepper. While still hot, pour the filling into pancakes and roll them up. If you like, you can also bake the pancakes in the oven (with a sauce made from one egg, a bit of crème fraîche, spices, and cheese on top). Serve with a green salad (iceberg lettuce, lamb’s lettuce, or lamb’s lettuce).
