Sausage salad with peppers

Ingredients for 4 servings:

  • 3 large bell peppers, red, green and yellow
  • 200 g sausage (beer sausage)
  • 1 vegetable onion(s)
  • 2 garlic cloves
  • 3 tsp Dijon mustard
  • ½ bunch chives
  • 2 tbsp balsamic vinegar, white
  • 3 tbsp oil
  • 4 tbsp water
  • salt and pepper

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Mustard dressing with garlic

Mix water, mustard, balsamic vinegar, pepper, and salt. Finely chop the chives and add them. Finely dice the onion and garlic and add them. Clean and finely dice the bell peppers. Cut the beer sausage into small cubes. Add the bell peppers and beer sausage, then add the oil. Mix everything together and let it simmer for about 60 minutes. Tastes great with grilled meat, or just with baguette.
