Savory Bacon and Cheese Muffins

Ingredients for 12 servings:

  • 1 bunch of chives
  • 150 g bacon, diced
  • 75 g butter, melted
  • 2 eggs
  • 250 g flour
  • 2 tsp baking powder
  • 1 tsp, leveled salt
  • 1 pinch of cayenne pepper
  • 125 ml milk
  • 100 g grated cheese, e.g. Gruyere

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Preheat oven to 200°C (180°C fan-assisted). Grease and flour the muffin tin or line it with paper baking cups. Wash the chives, shake dry, and cut them into rings using kitchen scissors. Fry the bacon in a frying pan. After frying, place the bacon cubes on kitchen paper and let the fat drain off. Mix the melted butter and eggs together in a bowl. In a separate bowl, mix the flour, baking powder, salt, and cayenne pepper. Stir into the batter alternately with the milk. Fold in the chives, bacon cubes, and grated cheese. Spoon the batter into the muffin tin in portions and bake the savory muffins in the preheated oven for about 15 minutes. Do the skewer test; no liquid batter should stick to the wooden skewer. Let the muffins cool slightly. They taste best warm.
