Ingredients for 2 servings:
- 150 g bread(s), rolls or baguette, stale
- 3 m.-sized eggs
- 1 cup of cream or CremeFine
- 1 pack of bacon cubes
- 2 balls of mozzarella
- 4 large tomatoes
- 1 onion(s)
- nutmeg
- salt and pepper
- Parsley, fresh
- Basil, fresh

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes
Recycling leftovers
Slice the bread, baguette, or roll and layer it in a baking dish. Dice the onion and fry it with the bacon, then let it cool. Crack the eggs into the cream and season with salt, pepper, nutmeg, and freshly chopped parsley. Slice the tomatoes and mozzarella (this works well with an egg slicer!). Pour the egg mixture and the bacon/onion mixture over the baguette and let it rest for about 20 minutes. Top with tomatoes and mozzarella and bake in the oven at 180°C for 15-20 minutes.
