Ingredients for 1 servings:
- 8 slices of puff pastry
- 2 bunches of spring onions (200-300 g)
- 1 tbsp butter or margarine
- 300 g sour cream
- 3 eggs
- 2 packs of mixed herbs, fresh or frozen
- 500 g cheese (medium-aged Gouda)
- salt and pepper
- nutmeg
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Thaw the puff pastry. Rinse a 28 cm diameter springform pan with water and line it with the puff pastry so that the edges are about 4-5 cm high. Prick the pan several times with a fork and then bake in a preheated oven at 200 degrees Celsius for about 10 minutes. Line the pan with parchment paper if desired and fill it with lentils to prevent the edges from sagging (blind baking), but this works well without. Slice the spring onions into thin rings, then sauté them in heated butter or margarine. Mix the sour cream with the eggs, spices, and herbs. Fold in the grated Gouda cheese and the sautéed spring onions. Spread the mixture over the puff pastry base and bake the cheesecake in a preheated oven at 200 degrees Celsius for about 25-30 minutes. A light yogurt and garlic sauce and a glass of chilled white wine go perfectly with this. It also tastes delicious cold.
