Ingredients for 4 servings:

  • 300 g flour
  • 2 tbsp flour
  • 4 eggs
  • Salt
  • Nutmeg, grated
  • 3 tbsp mineral water
  • 3 onions
  • 20 g butter
  • 2 sprigs of parsley
  • 1 tbsp oil
  • 100 g mountain cheese, grated
  • Fat, for the shape

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Enjoy vegetarian food – something delicious without meat

Mix 300g flour, eggs, 1 teaspoon of salt, nutmeg, and mineral water into a smooth, thick dough. Let the dough rest for about 1 hour. Peel the onions, slice them into thin rings, toss them in 2 tablespoons of flour, and fry them in hot butter until golden brown. Wash and chop the parsley. Boil salted water with oil. Place some spaetzle dough on a moistened wooden board and scrape fine strips into the boiling water with a long knife. Boil until the spaetzle rise to the surface, remove them, and refresh briefly. Drain and keep warm. Use the remaining dough in the same way. Preheat oven to 200°C (400°F). Mix the spaetzle with the cheese and place them in a greased baking dish. Scatter the onions over the dough. Bake for 20-25 minutes. Sprinkle with parsley.
