Savory puff pastry with goat cheese

Ingredients for 8 servings:

  • 1 package of puff pastry, frozen, 450 g
  • 1 large onion(s), red
  • 200 g bacon, lean, smoked, diced
  • 200 g crème fraîche
  • 2 egg yolks
  • 3 slice(s) goat’s cheese, e.g. Picandou
  • 1 tbsp milk
  • Thyme
  • Salt

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Thaw the puff pastry. Quarter the onion and slice into thin strips. Fry the bacon and stir it into the crème fraîche with the fat and 1 egg yolk. Stir in the onion strips. Season with thyme, salt, and pepper. Cut the puff pastry into 8 squares. Fold the corners slightly toward the center and tuck in the sides. Spread the crème fraîche mixture on top, crumble the goat cheese, and spread it on top. Mix 1 egg yolk with milk and brush the dough with it. Bake at 175°C for about 20 minutes.
