Savory Spinach Cake Pops

Ingredients for 1 servings:

  • 100 g creamed spinach
  • 2 eggs
  • 60 g flour
  • some baking powder
  • some salt and pepper
  • 125 g herb cream cheese
  • 50 g butter
  • some salt and pepper
  • 20 g ham
  • 125 g herb cream cheese
  • 50 ml cream (whipping cream)

Working time approx. 1 hour; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 20 minutes

Spinach sponge cake: Beat eggs until frothy. Add the thawed creamed spinach, season with salt and pepper, and fold in the flour and baking powder. Spread the mixture onto a small baking sheet (approx. 30 x 20 cm). Bake in the oven at 160°C (convection oven) for approx. 20 minutes. Let the sponge cake cool. Cream cheese mixture: Cut the ham into very small cubes, mix the cream cheese and butter, season with salt and pepper, and fold in the ham. Crumble the sponge cake and mix well with the cream cheese mixture. Form the mixture into balls of approx. 25 g. Makes approx. 14 balls. Chill the balls for half an hour. Topping: Beat the herb cream cheese and whipped cream for a few minutes. Dip the cake pop sticks approx. 1 cm into the mixture and then insert them into the balls. Decorate the cake pops with the topping and fresh chives. You can also prepare the cake pops without meat or with smoked salmon instead of ham.
