Savory waffles with zucchini

Ingredients for 3 servings:

  • 1 zucchini
  • 1 small onion(s) or shallot
  • 100 g Parmesan
  • salt and pepper
  • 350 g flour
  • 3 tsp, leveled baking powder
  • 6 eggs
  • 1 tsp salt
  • 375 ml milk
  • 50 g crème fraîche
  • 125 g butter

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Wash the zucchini. Peel the onion. Grate both. Then squeeze out any excess liquid from the zucchini. Grate the Parmesan cheese as well. Mix all three ingredients well and season with salt and pepper, if desired. For the waffles: Beat the butter and salt for about 2-3 minutes until fluffy. Separate the eggs. Gradually add the egg yolks to the butter and mix well. Mix the flour and baking powder. Alternately stir the flour mixture and milk into the butter. Stir in the zucchini mixture. Then add the crème fraîche and mix. Finally, beat the egg whites until stiff peaks form and carefully fold them into the batter. Bake the waffles in the waffle iron.
