Ingredients for 4 servings:
- 8 m.-sized potatoes, mainly waxy
- 16 slices of bacon
- 1 onion(s)
- 1 mozzarella
- 150 g herb cream cheese
- some Parmesan
- salt and pepper
- Parsley
- 1 handful of grated cheese, e.g. Emmental, for topping
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 5 minutes
Boil the potatoes, then peel them. Then halve them lengthwise and hollow them out. Preheat the oven to 200°C (top/bottom heat). Peel and dice the onion. Chop 8 slices of bacon into small pieces and fry them with the onion. Cut the mozzarella into small cubes. Mix the cream cheese with the onion-bacon mixture and the mozzarella. Season to taste with Parmesan, salt, pepper, and parsley. Now spread the cream cheese mixture into the hollowed-out potatoes. Wrap the potatoes in half a slice of bacon and place in a baking dish. Sprinkle with cheese. Place in the hot oven for 15-20 minutes. Tip: If there is any leftover cream cheese mixture, simply add it to the baking dish and bake.
