Scalloped potatoes – minced meat – tomatoes

Ingredients for 4 servings:

  • 800 g potatoes
  • 1 onion(s)
  • 2 tbsp, leveled oil
  • 400 g minced meat (half+half)
  • 400 g tomatoes
  • 200 ml vegetable stock
  • 100 g cheese, medium-aged Gouda
  • some parsley
  • Salt
  • Paprika powder, sweet

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Boil the potatoes with their skins on for about 20 minutes, drain, let cool slightly, and then peel off the skins. Slice the potatoes and place them in a greased baking dish. Peel and finely dice the onion. Heat the oil and fry the minced meat until crumbly. Briefly fry the onion. Season with salt, pepper, and paprika. Wash and slice the tomatoes. Spread the minced meat over the potato slices, then place the tomato slices on top. Pour over the stock. Sprinkle with cheese. Bake in a preheated oven (electric oven for about 15-20 minutes at 200°C). Sprinkle with chopped parsley.
