Ingredients for 2 servings:
- 300 g scampi or shrimp
- 1 large onion(s)
- 350 g waxy potatoes
- 200 zucchini (also carrots, broccoli, tomatoes or other vegetables or mushrooms such as pea pods, mushrooms
- 2 tbsp olive oil
- 4 leaves of fresh basil
- Salt
- pepper
- lemon juice
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 55 minutes
Marinate the scampi with salt, pepper, lemon juice, and olive oil (thaw if necessary). Slice or dice the onion and fry well in a nonstick pan. Dice the potatoes (cooked the day before is best) and add them. Brown the potatoes and onion. Add the diced vegetables. Later, add the marinated scampi, season with salt, pepper, and fresh basil, and fry thoroughly. Serve the scampi rösti on marinated leaf salad. This dish can also be complemented with a sour cream and yogurt dip or a fried egg per person. If desired, the scampi can be replaced with firm fish fillets.
