Scampi or king prawns Diavolo

Ingredients for 4 servings:

  • 500 g king prawns or scampi
  • 2 onions
  • 4 garlic cloves
  • 500 g tomatoes, fresh or from a can
  • 100 ml olive oil
  • 10 g sambal oelek
  • 1 bunch of parsley
  • salt and pepper
  • Sugar

Clean the scampi/prawns, remove the shells, and devein them. Peel and finely dice the onions and garlic. Peel and deseed fresh tomatoes, remove the seeds, and cut them into small cubes. I like to use ready-made tomatoes, either from a can or a carton. These can be whole or chunky. Heat the oil in a large pan, then briefly sauté the onions and garlic. Next, add the sambal oelek. I’m always careful with this; it’s better to add a little seasoning than to have the flames catching in your throat. So start with a little and adjust the seasoning later. Add the cleaned and patted dry scampi/prawns, along with the tomatoes. Fry everything briefly and season with pepper, salt, and a little sugar. Add the chopped parsley at the very end. Goes perfectly with fresh baguette or rice. Add a nice cold beer, and you have a delicious, quick dish.
